Heat oil in a pan and crackle black mustard seeds and curry leaves.
Add chopped ginger, garlic and fresh green chillies and cook till the raw aroma of the garlic is gone.
Add chopped onions and sauté till the onions are soft and translucent.
Add Pataks mild curry paste and 60 ml water and cook on medium heat till all the water has evaporated.
Add fresh chopped tomatoes and turmeric powder and cook on medium heat till the tomatoes are soft and mushy.
Add grated paneer, fresh coriander and salt to taste and cook for 3-5 minutes and keep aside.
Following instructions on the Dosa Batter pack, make the Dosa batter.
Take a large spoonful of batter and smear it on medium hot, non- stick pan or well-seasoned Dosa griddle to make it as a pan cake as thin as possible to a point where it holds its round shape.
As soon as the bottom starts colouring, sprinkle some oil on top of it and put some ready paneer bhurji on it. Fold in half moon shape and serve hot with sambar and chutney.

A simple vegetable dish using potatoes and peppers, as well as the wonderful spices of our Rogan Josh Spice Paste. I've added extra spices such as cumin, ginger and chilli to really bring out those spicy flavours and give this dish a bit of a kick.
