Sizzling Pepper Rogan Josh Wraps

A great lunchtime meal, this is really simple to make and tastes simply divine. The vegetables taste delicious cooked in the Rogan Josh Spice Paste, and wrapped in our authentic Chapattis, these are a delicious alternative to a sandwich.

Ingredients

Serves 2 people

  • 1-2 tbsp Patak's Rogan Josh Spice Paste
  • Olive Oil
  • 1 red pepper, deseeded and cut into chunks
  • 1 yellow pepper, deseeded and cut into chunks
  • 1 tomato, cut into chunks
  • 4 mushrooms, sliced
  • 2 plain Patak's Chapattis (or plain wraps)
  • 1 tsp crushed garlic
  • 1 tbsp 0% fat Greek yogurt
  • Fresh coriander leaves to garnish
  • 2 lemon wedges to garnish
  • Handful of salad leaves to serve

Method

  1. Heat a large wok until it is piping hot. Spray or wipe with the oil, add the peppers and stir fry for five minutes or until the peppers have charred.
  2. Add the tomatoes and mushrooms and stir fry for three minutes.
  3. Stir in the Patak's Rogan Josh Spice Paste with the garlic and cook for two minutes before adding 1 tbsp water.
  4. Warm the Chapattis/wraps as directed on the packet.
  5. Roll the wraps into a cone and secure with a cocktail stick. Spoon the vegetable mixture into the cones.
  6. Serve garnished with a little green salad, a lemon wedge, the Greek yogurt and fresh coriander.
