Slow Cooked Lamb Shanks - (Kareli Ki Nihari)

Succulent, flavoursome and delicious - these lamb shanks are mouthwatering. They are part of my 'Traditional Diwali Menu' and take a bit of time, but are truly worth it. I can't think of any better way to celebrate Diwali, than eating lots of food with friends and family, and these lamb shanks are sure to impress all-comers.

Ingredients

Serves 4 people

  • 2 Tbsp Vegetable Oil
  • 4 Lamb Shanks (350g-400g)
  • 2 Medium Onions, Sliced
  • 400g Canned Chopped Tomatoes
  • 100ml Lamb or Chicken Stock
  • 150g Cherry Tomatoes
  • For Garnish Freshly Chopped Coriander
  • 4 tbsp Patak’s Rogan Josh Spice Paste

Method

  1. Place the vegetable oil and lamb shanks in a large frying pan and fry over a medium heat for 8-10 minutes, turning occasionally to ensure browning on all sides.
  2. Place lamb shanks, sliced onions, Patak’s Rogan Josh Spice Paste, Tomatoes and stock into the slow cooker.
  3. Turn on the slow cooker and cook on low for 8 hours.
  4. Add the cherry tomatoes 20 minutes prior to serving.

Serve with roasted root vegetables and garnish with freshly chopped coriander.
