Cauliflower Pilau

Ingredients

Serves 2 people

  • 400g Cauliflower, Grated
  • 15g Ginger, Chopped
  • 15g Garlic, Chopped
  • 1 Green Chilli, Chopped
  • 2 Dried Red Chilli, whole
  • 20 Fresh Curry Leaves
  • 1tsp Black Mustard seeds
  • 50g Patak's Mild Curry Paste
  • 150g Onion Chopped 10mm diced
  • 5g Mint Leaves Chopped
  • 150g Frozen Mixed Vegetables, or 150g fresh chopped carrots and broccoli
  • 75ml Water
  • 15g Turmeric Powder
  • Fresh Green Coriander Chopped
  • 15ml Lemon Juice
  • 50ml Oil
  • 20g Butter
  • Salt To Taste

Method

  1. Heat oil in a wok or a deep frying pan and crackle mustard seed, dried red chilli whole and curry leaves.
  2. Add the chopped onions and cook till the onions are golden brown and soft.
  3. Add ginger, garlic and green chilli chopped and cook till the raw aroma of garlic disappear.
  4. Add turmeric powder, Pataks Mild curry paste and water and cook on medium heat till the water evaporates.
  5. Add grated cauliflower and frozen vegetables to the cooked spices and mix well. Heat till the cauliflower is cooked and finish with butter, fresh mint, fresh coriander, lemon juice and salt.
  6. Serve hot with plain yogurt or raita.
