Vegetable Biryani

A deliciously spiced one-pot biryani to change up your midweek meals at home in 30 minutes.

Ingredients

Serves 4 people

  • 5tbsp Vegetable Oil
  • 1 White Onion, sliced
  • 175g Natural Yoghurt
  • 5tbsp Patak’s Madras Paste
  • 1 White Potato, peeled and diced
  • 250g Frozen Mixed Vegetables
  • 250g Basmati Rice, washed
  • 750ml Water
  • Salt
  • 10g Fresh Coriander, chopped (optional)

Method

  1. HEAT the oil in a pot with a lid and fry the sliced onions. Meanwhile, mix the yogurt and paste together in a bowl.
  2. When the onions are golden brown, ADD the yoghurt mix to the pan and cook on a high heat for 3-4 MINS.
  3. ADD the potatoes and frozen vegetables, cooking for 5 MINS or until the vegetables are defrosted.
  4. ADD the rice and water, mix well and cook on a medium heat, stirring intermittently till most of the water evaporates and you can see the rice on the surface of the pot.
  5. COVER the pot with the lid, reduce the heat and leave for 10-12 MINS, keeping the lid on for the remainder of the time.
  6. SERVE and garnish with fresh coriander.
